Belgian Gueuze
A traditional Belgian beer style, a blend of young Lambic and aged Lambic, then bottled and aged for another 2–3 years. The result is a drier, fruitier and more complex beer than regular Lambic. The beer has almost no hop character, and is sometimes filtered or force-aerated if not pasteurized. Compared to Lambic, Gueuze has more complexity, a more robust effervescence and a more pronounced “wild” flavor, while the acidity is not necessarily higher but is more refined and complete. This is considered the “jewel” of Belgian sours, famous for its blend of long tradition and sophistication in brewing techniques.
