Belgian Gueuze Often referred to as the "Champagne of the beer world," this is one of Belgium's most complex and artisanal beer styles, created by blending several lambices of different ages and then further refermenting them in the bottle.
Interestingly, Gueuze isn't a ready-to-drink beer; it's more like the blending art of Champagne or whisky. Brewers combine young, yeast-rich lambic with aged, dry lambic and strong funk to create a balance of acidity, fruit, funk, and carbonation.
Beer has color straw gold to amber gold, with citrus, green apple, hay, funk, oak, and Brett character notes. Extremely complex. Despite its acidity and vibrancy, Gueuze still possesses an elegant, clean, and dry feel, and is considered by beer geeks to be the pinnacle of spontaneous fermentation.
