Belgian Fruit Lambic
A style of Lambic brewed with fruit, often found in variations such as Kriek (cherry), Framboise (raspberry), Cassis (blackcurrant) or Pêche (peach). The beer takes on the colour and flavour characteristics of the fruit used, and can be dry or sweet, clear or cloudy depending on the recipe. The wild yeast Brettanomyces is often present at varying levels, creating depth of flavour. Acidity is key in this style, but sweetness can also soften the intensity. Fruity variations of Lambic can be very dry and crisp, or light and sweet, offering an experience that is both complex and approachable.
