Wild Ale

A modern American beer style, often influenced by Belgium, characterized by exposure to wild yeasts or bacteria such as Brettanomyces (Bruxellensis, Lambicus, Anomalus), Pediococcus, or Lactobacillus. This can occur in previously inoculated oak barrels, directly added to the beer, or through “sour mash” techniques. The result is a complex flavor and aroma profile that ranges from subtle to wild, often with a sour and funky character. Blended versions often produce complex flavors rather than a single characteristic, creating an unexpected and multi-layered experience for the drinker.
