Old Ale
A classic beer also known as Stock Ale, with a low fermentation rate, rich in dextrins, giving it a thick body and character. In the past, Old Ales were often transferred to large casks to mature, hence the name. The colour ranges from deep amber to dark brown, sometimes almost black. The aroma is usually deep, not harsh. The taste is dominated by fruit, wine, full malt and a sharp alcoholic signature, sometimes with a slight sourness, raisin or blackcurrant. Older versions can have a slight oxidation, while stronger versions resemble sweet port wine. Some brewers also add Brettanomyces lambicus to part of the batch and age it for a long time to recreate the classic slightly sour flavour.
