At that moment, Zwickel appeared – no ostentation, no flash – but simply like an old friend sitting down next to me, smiling.

Zwickel It doesn't try to surprise you, it just quietly evokes familiar emotions: the smell of bread from the oven, the warm malt taste, the smooth glaze like morning dew. 1. Urban Chestnut: Where the Journey of Two Beer-Loving Souls Begins

One cold morning 2011, in the heart of historic St. Louis, where fog lingers on the glass windows of a small brewery, two men—a beer master from idyllic Germany and a storyteller from the world of marketing—have come together to hatch a dream called Urban Chestnut Brewing Company.

Florian Kuplent, with a gaze as calm as the autumn barley fields of Bavaria, brings recipes refined over years of apprenticeship in Europe. Next to him is David Wolfe – who puts emotion, story and soul into every glass of beer. They don’t just brew beer, they create a symphony – where “Beer Divergency” become a philosophy of life: honoring tradition through Reverence Series, and stir up modernity with Revolution Series.

From its first drops in Midtown, Urban Chestnut has spread like a spring breeze, expanding to Grove Beerhall in 2014 – where music, food and beer meet in a never-ending party. Then in 2015, like a closed circle, they brought that spirit back to Germany, opening Hallertau Brauerei in Wolnzach – the sacred land of hops.

In 2021, they raised their glasses to celebrate 10 years, not just to look back on the past, but to affirm: this journey of passion has never stopped burning. And even though by June 2025, Urban Chestnut had to go through changes and restructuring, that fire is still intact - smoldering in the hearts of every worker, every brewing machine, and in every glass of sparkling beer poured.

Zwickel – also known as Zwickelbier – is a classic German lager, born from the depths of the beer cellar where the cold wooden barrels still retain the aroma of live yeast. Unfiltered, unpasteurized, unpainted – Zwickel is the pure honesty of beer, where yeast is still suspended, telling old stories by lightly touching the tip of the drinker's tongue.

Compared to its brother Kellerbier, Zwickel is gentler – a whispering love song, less strong flavor, less brewing time, but enough to awaken the first feeling of a true beer: fresh, natural, and quiet like the morning dew on the hop fields of Bavaria.

With alcohol content only 5.1% and IBUs in the range of 19–20, Zwickel is as gentle as a whisper. It's not aggressive, not harsh, just gently balanced – the malty flavours are held back by a slight bitterness, enough to make the finish memorable without being too lingering.

Zwickel is located in lower half of the Zwickelbier bitterness spectrum – which makes it a great choice for anyone looking for a beer that is easy to “quaff” – easy to drink, easy to love, easy to remember.

2.4. Body & Feel – Soft as velvet, smooth as a breeze

Zwickel owns average body, a bit plump like a snug hug on a chilly afternoon. The feeling of drinking beer is a bit “smooth” – thanks to the yeast layer still present like a thin mist.

Carbonation at a moderate level, even slightly lower than regular lagers, making each sip of beer flow down the throat like a stream of water, smooth yet refreshing.

According to beer-loving souls in the homebrew community, the secret lies in balance: 93–97% Pilsner, and just a touch of Carafa or Carahell – like a bass note in a piece of music – to darken the colour and soften the structure of the beer, giving Zwickel a beauty that is both pure and mysterious.

3.2. Hop – Rosemary and delicate exclamation point

Zwickel is indispensable. Hallertau Pearl and Central Hall – two legendary hops from Germany. If Pilsner is light, Hallertau is scent – gentle, light violet fades in the wind, creating a gentle, pure herbal floral scent.

Zwickel's bitterness is only modestly present in the range. 19–20 IBU – enough to keep the balance, like a highlight in a silent song. And as one beer lover once said: “Mittelfrüh – perfect hops in a Pils”, in Zwickel, it is wholeness.

No one saw the yeast, but everyone knew it. feel its traces. For Zwickel, it was UCBC Lager yeast – a unique yeast strain, nurtured by Urban Chestnut, as the soul keeper of this beer.

Fermented at low temperatures, the yeast not only creates a characteristic smooth mouthfeel, but also stay in beer – not filtered, not erased. It is the yeast that gives light opaque like morning dew, the “smooth, vitamin-rich” feeling that you can only find in live beers – where the yeast is still singing in the glass.
