There are moments when the palate craves something different. Not the bitter storm of hops, nor the warm, rich embrace of malt. It is a whisper, a gentle breeze carrying the scent of weeds growing in the backyard after a rain, with hints of ripe mango and yellow apricot.

It invites you to slow down, to listen to a story brewed by the wildest yeasts, to find a strange serenity on the tip of your tongue. It is not a beer you drink loudly, but something you feel, to let your soul wander with each sip, crisp, dry and full of charm. The story has a name as beautiful as a prayer: Serenity.

1. The Journey of a Wicked Weed: The Story of Wicked Weed

There is a story that begins 2012, in the heart of the mountain town Asheville, North Carolina dream. There, the Dickinsons – Walt and Luke – hatched a bold dream. They wanted to brew beers that didn’t conform to any mold, amber streams with a “wild” spirit and proud acid fermentation, inspired by the beer cradle of faraway Belgium. And so Wicked Weed – “Evil Weed” – was born, with a challenging name inspired by the words of King Henry VIII: “Hops are a noxious and dangerous weed”. Perhaps, in that name already hides a fate full of ups and downs?

They grew up as legends, shining stars in the craft beer community. But then, 2017 marked a turning point argumentative incessant: Wicked Weed is The giant Anheuser-Busch InBev bought it. For many, it was a sweet “betrayal”, a turn that made the hearts of craft beer enthusiasts sink, turning their backs on a once pure love. And the story seemed to end in regret when in May 2023, the taproom door at 91 Biltmore Ave – a place that holds many memories – closed forever. Although the brand is still there, the soul of “Wild Grass” in the Blue Ridge Mountains seems to have turned into a legend.

2. Funkatorium: Kingdom of Flavorful Enlightenment

Wicked Weed isn't just famous for their business shocks. Their real reputation is built on their own Brand Origin The creative brewery produces two distinct flavour streams. One is the zesty hop-forward line, with the Pernicious IPA that captivates many aficionados. But it’s not until you step into The Funkatorium – a private kingdom of spontaneously fermented beers – that you truly touch the soul of Wicked Weed. It’s where the senses are awakened by the enchanting “funk” flavours, where Brettanomyces yeast works like a wizard, transforming every drop of beer into a living work of art.

And in the midst of that kingdom, Serenity shine like a gem. This is not just a beer, but a American Brett Beer Serenity, a symphony fermented with 100% using Brettanomyces yeast. It was born very early, in the early days of The Funkatorium (around 2013-2014), as a declaration of the beauty of simplicity and purity. Serenity is the “wildness” tamed in every sip of experience: dry, gentle, with fresh fruity notes and a slight sourness that passes like a spring breeze. It is the oldest bier de coupage – the art of blending – the foundation, the gentlest love song in a turbulent world, worthy of the name "Peace" that it carries.

3. Serenity: Brett Men's Pure Love Song

Forget the conventional definitions of beer. Serenity It is not a full-bodied Ale, nor a simple Lager, nor a bitter IPA. It is a Brett Beer – a “wild” symphony written by Brettanomyces yeast, a noble descendant of American Wild Ale. To enjoy it is to listen to a magical story, where this special yeast becomes a talented soloist, leading all the senses on a pure and enchanting journey.

3.1. The Beauty of Simplicity: A Clear Prelude

First look, Serenity has made our hearts flutter with its pale straw yellow color, as clear as a drop of pure morning dew on the grass fields. With only 5.4% alcohol content, it is like a cool, gentle and extremely easy-to-drink breeze, inviting us to enter its world without any hesitation. The bitterness (IBU) is only around 10-20, enough to be the background, like a vague prelude, without overpowering the main symphony of flavors.

3.2. Emotional Journey: From Fragrant to “Wild”

Bringing the glass to your nose, a new world opens up. The aroma is a fresh dance of tropical fruits – sweet mango, ripe pineapple – mixed with the gentle sweetness of peach and apricot. But hidden behind that sweetness is a seductive and mysterious attraction: the characteristic “funky” note of Brettanomyces light, like the smell of wet grass after the first rain of the season, with a "wild" yet delicate breath.

When the first drops of beer hit the tip of the tongue, the feeling of light, crisp and dry body comes, like a cool wave that washes away all worries. The sourness, if any, is only fleeting, gentle like a momentary sadness, not harsh at all. The main flavor is still the beauty of fresh fruits and the unique “Brett funk” personality.

And then it all ends in a refreshing and pleasant way. The dry and clean finish leaves a delicate aftertaste, leaving our hearts fluttering and the corners of our mouths yearning for the next sip. That is the miracle called Serenity – true serenity.

4. The Art of Feeling Serenity: A Ritual for the Senses

Enjoy Serenity It's not just a glass of beer, it's a delicate concert for your senses. Each step of preparation is a note, contributing to the symphony. "feral" most complete and fascinating.

4.1. Temperature of an Encounter

Let Serenity shine at temperature 45 – 50°F (7 – 10°C). This is the golden temperature range, warm enough for the most complex tropical and “funky” fruit notes to sing. If it is too cold, the story of the Brettanomyces yeast will fall asleep, and you will lose the most sophisticated vibes.

4.2. Dance of the Cups

Cherish it in a Tulip Glass. This glass is the perfect stage, with its rounded belly allowing the aroma to diffuse, and its closed mouth invitingly leading all the floral and earthy aromas straight to your nose. If you don’t have a Tulip, a warm Snifter or a delicate Wine glass will also be great companions.

4.3. Foreplay with Cuisine

Serenity is a great companion, knows how to enhance the beauty of dishes:

  • Seafood: Picture succulent grilled salmon or plump oysters, their richness washed away by the crispness and dryness of the beer.
  • Cheese: This is a date with destiny. Fresh goat cheese, soft Brie or Camembert will awaken the “funky” notes in the beer, creating a seductive dance of taste.
  • Asian Cuisine: A spicy ginger Thai salad or sweet and sour chicken will find a soulmate in the fresh fruity flavors of Serenity.

4.4. Serenity's Moment

Come find it on those warm spring afternoon or a hot summer day, when you need a cool breeze to blow away your thirst. It is the soul of outdoor picnics, friendly meetings full of laughter, or simply an aperitif to awaken all the senses before a party.

And above all, Serenity is the gentlest gateway into the world of spontaneously fermented beer. Give it to a curious heart, and let them be seduced by Brett yeast from the first encounter.

5. Conclusion For A “Weed” Dream

Serenity is not just a beer, but a pure emotional journey. It is the gentlest love song in a symphony of upheavals, the breath of the Blue Ridge mountains condensed into each sparkling drop of gold. Each sip of Serenity is a time to get lost in a garden full of flowers and fruits, where the aroma fresh fruit blend with the wind funky gentle, and ends in a strange serenity.

Despite the ups and downs of Wicked Weed’s story, Serenity remains the purest flower, untainted by the dust of the world. It reminds us that in a noisy world, simplicity and purity are the most charming things. Raise your glass, close your eyes, and listen to your soul – that is the sound of peace.
