I was once a young man who loved words, and had a heart that yearned to write touching pages of literature. With a backpack, a notebook, and a pair of old shoes, I roamed across the American West, searching for living material – material that carried the breath of the land, the taste of the wind, and the emotions of the people I met.

Then one afternoon, as the golden sunset poured over the San Marcos tiled roof, I stumbled into a small craft beer bar. The cozy space, the fragrant malt aroma, and the murmuring laughter were like a prelude to the magic to come. I ordered a drink without even looking at the name – just wanting to dispel the fatigue. And then, Hop 15 appear.

From a wanderer, I became a lover of flavors. Hop 15 breathed life into my once desperate writing, making each word seem to have yeast, rhythm, and aroma of hops. And so I wrote. Wrote about it – about Hop 15, a masterpiece named after 15 hop varieties, but stirring up countless emotions in the hearts of those who enjoy it.

1. The Birth of Hop 15

The story begins in the year 1987, when Pizza Port – a small but ambitious pizza place in Solana Beach, California – opened with the ambition of not only serving pizza but also being the cradle of the local craft beer culture. Over the years serving delicious pizza and great craft beer, Pizza Port quickly became an icon of the Southern California beer community.

Arrive 2002, to celebrate Pizza Port’s 15th anniversary, the creative team behind the brand has launched a special beer – Hop 15. This is not just a beer, but also a tribute to the journey they have gone through, and a testament to their relentless creativity. With a bold idea: uses up to 15 different types of hops, Hop 15 is a breakthrough in both flavor and complexity of brewing technique.

The big turning point happened at 2006, When Tomme Arthur – a veteran brewer, along with two brothers Vince & Gina Marsaglia, decided to separate Pizza Port's brewing operations and establish Port Brewing CompanyThey chose San Marcos as their new home, a place with plenty of space and ideal conditions for developing premium beers. Here, Hop 15 continued to be perfected and became the flagship for Port Brewing's reputation.

In its first year of operation, Port Brewing has affirmed its position with prestigious titles. “Small Brewery of the Year” at the Great American Beer Festival 2007. The next two years, they continued to make their mark at World Beer Cup 2008 and San Diego International Beer Festival 2013 – awards that prove Hop 15 is more than just a passing phenomenon, but a true icon in the craft IPA world.

Hop 15 is no longer produced regularly, but when it does appear, it is always a sought-after gift – a living testament to the golden age of American Western IPAs.

2. Imperial IPA Style: Rich and Enchanting

Imperial IPA – also known as Double IPA – is a beer style for those who love the strong, rich and explosive aroma of hops. Hop 15 is the perfect embodiment of this style, carrying a high alcohol content of up to 11% ABV and use to 15 different types of hopsThis bold combination creates a symphony of flavors unlike any other beer.

Visually, Hop 15 ranges from amber to deep orange in colour, shimmering in the light like fermented honey. A smooth ivory head covers the surface like a feather on a king’s crown. When you bring the glass to your nose, you are greeted by an intense aroma – fresh citrus, dense pine resin, ripe mango, sweet pineapple and a hint of pine resin from the deep forest.

The first sip is like a tropical breeze blowing across the palate – crisp citrus, followed by layers of tropical fruit such as passion fruit and papaya, before closing with caramel, buttery biscuit and a light roasted malt aftertaste. Despite its high ABV, the Hop 15 is delicately balanced between sharp bitterness and gentle sweetness, creating a surprisingly pleasant sensation.

The use of up to 15 types of hops not only demonstrates the brewer’s technical expertise but also builds complex depth in each sip. The flavors change over time – from fresh and vibrant to warm and deep – allowing the drinker to discover something new with each sip.

Hop 15 is not for beginners, but rather a fun challenge for veteran IPA fans – those ready to let hops dominate their senses.

3. The Secret to Enjoying Hop 15 Perfectly

Enjoying Hop 15 is not just about drinking a beer, but the art of feeling a symphony of tastes:

  • Ideal temperature (8–10 °C): This is the temperature that helps preserve the hop oils while also softening the high alcohol content. If it is too cold, the flavor will be numbed; if it is too warm, the beer will be harsh. At this temperature, each layer of aroma is fully opened.
  • Suitable glass type (Tulip): Not only does it hold the foam, the Tulip glass with its slightly closed mouth also helps concentrate the aroma, allowing you to clearly feel every note of orange, mango, resin... The Tulip glass also brings elegance, enhancing the visual experience.
  • Beer pouring technique: Tilt the glass at a 45° angle, pour gently from the side to control the foam, then stand the glass upright at the end to create a beautiful “beer cap”. A moderate foam layer not only looks beautiful but also retains the aroma longer.
  • Fusion food:
    • BBQ and grilled meat with rich flavor: The bitterness of Hop 15 will soften the fatty taste, while blending with the smoky taste.
    • Taco, mildly spicy:The tropical fruit flavors in the beer balance out the spiciness.
    • Fatty cheese (Brie, Blue Cheese): The mild malt sweetness and hop bitterness contrast perfectly with the richness.
    • Mexican or Tex-Mex: The explosive feel of Hop 15 adds depth to the culinary experience.
