I don’t remember exactly what day it was, only that the wind was blowing and the treetops along Dai Co Viet Street were starting to turn yellow. One autumn afternoon 5 years ago, when I was wandering around in a hazy mood after school – the time when I was still a naive and ambitious student, I accidentally stopped by a strange little shop, just because of the warm light shining through the misty glass door.

The owner, a bearded man, handed me the bottle. Silly Sour cold mist. I opened the lid and smelled the scent green apple, cider, and somewhere there is a breath of air fun very light, like the late autumn wind caressing the collar. When the sour The first time it touched my tongue, I heard a clear laugh coming from the next table – where a friend who would later become my confidant was raising his glass and smiling at me.

We talked all that evening, from the strange taste of beer to poorly learned poems, trivial love affairs, until now I can never forget!

1. A Journey Through History: From Small Silly Village to Beer Culture Icon

Nestled in the tranquil countryside of Hainaut, Belgium, the little-known village of Silly is home to one of Europe's oldest and most unique craft breweries – Brasserie de Silly. The history of the factory began in 1900. 1850, When Marcelin Hypolite – a farmer with a passion for beer – decided to open a small brewery on his own barley field. At that time, beer was not only a refreshing drink, but also a way to preserve grain, to share the bountiful harvest with the villagers.

Over more than a century and a half, Brasserie de Silly still lies quietly by the village road, but inside, each generation of descendants has quietly preserved the fermentation secret, refining each batch of beer like a work of art. World War I caused the factory to be interrupted, but like the Belgian spirit - perseverance and dedication - the factory has revived and developed strongly through each period.

Today, the factory is still family owned, and has been passed down through 6 generations. What's special about Brasserie de Silly is a clever blend of tradition and innovation. They still keep the old copper stove, ferment in oak barrels, but are not afraid to experiment with new beers like Silly Sour – a bold combination of Season fresh and Flanders Oud Bruin classic.

The raw materials used by the factory are all carefully selected from famous lands: malt from Germany, hops from England, Belgian yeast. All is crystallized in every drop of beer named Silly – both rustic and profound, like the soul of the land and people here.

No noise, no flash, the journey of more than 170 years of Brasserie de Silly Like the beer they make – rich, refined, and always leaves a lasting taste.

2. Silly Sour – A Gentle and Emotional Contrasting Sour Flavor

If you thought sour beer was only for thrill seekers, then you probably haven't tried it yet. Silly Sour. This beer does not attack the taste buds as violently as many modern Sour Ales, but chooses a softer, gentler approach – like a whisper in a quiet autumn afternoon. Blended from Season fresh and Flanders Oud Bruin classic, Silly Sour is a strange contrast between two worlds – between sharp sourness and smooth sweetness, between newness and origin.

When opening the bottle cap, the smell fermented green apples, mild balsamic vinegar, a little bit raw cider and light funk from the natural fermentation process that enters the nose, awakening memories of old days. Fermented with bacteria Lactobacillus combined with Saccharomyces cerevisiae, this beer retains just enough acidity to impress, but doesn't overwhelm the deep malt flavors.

With alcohol concentration 5.5% ABV, Silly Sour not a strong beer, but a beer that makes people remember forever. The light foam like the afternoon clouds, the smooth texture, the moderate effervescence – all evoke the feeling of walking on a road full of yellow leaves, gently, without hurry.

Unlike modern sours that are infused with vibrant fruit, Silly Sour retain the soul of Flanders Oud Bruin – a mixed fermentation beer style that has been around for hundreds of years in Belgium. This makes it not just a beer, but a piece of heritage in a new way.

One interesting point is that Silly Sour usually aged for at least several months to allow the layers of flavor to reach optimal blend. lightly roasted brown malt, burnt caramel, lingering in the aftertaste like a gentle ending to a sad jazz song. It is a beer not meant to be drunk quickly, but to be sipped, to be pondered, and sometimes, to be left alone in memory.

In an age where everything seems to want to make an impression quickly and strongly, Silly Sour choose to stay. Gently, quietly, but deeply.

3. How to Enjoy Silly Sour – When Beer Becomes Art

Enjoy a drink Silly Sour It’s not just the act of drinking beer, it’s a ritual – a moment of harmony between the senses and emotions. And to fully experience the essence of this beer, the glass you hold in your hand is just as important as the taste inside.

Not a pint glass, not a traditional lager glass, but a glass tulip – a symbol of sophistication. The glass has a slightly flared mouth like a blooming flower, the bulging body helps to capture the complex layers of aromas of the wine. Silly Sour, from fermented green apples, light balsamic vinegar, to class roasted brown malt hidden behind. The tulip glass is not simply a container, but a “miniature concert hall” where each scent note is diffused and smoothly guided to the olfactory system.

When pouring beer, tilt the glass slowly, allowing the fine foam to rise just enough, like a thin layer of clouds covering the nostalgic sky. Place the glass on the old wooden table, touch your lips for the first time, you will feel the ideal temperature of about 8-10°C get to work – gradually releasing layers of flavor: sharp sourness on the tip of the tongue, sweet aftertaste, then a bit of light tannin that makes the mind dreamy like a late autumn afternoon.

Sitting alone, you can close your eyes and inhale the scent rising from the mouth of the glass as if you were lost in a small market in Flanders with stacked wooden beer barrels. Drinking with a close friend, each clink of glasses is a common heartbeat, as if Silly Sour is telling memories with taste.

4. “Stupid Silly Sour” Version – Strong Personality for Sour Lovers

If Silly Sour is a gentle love song, then Stupid Silly Sour is a wild and rebellious remix of the original. This is not a beer for the quiet soul. It is a sudden push in the quiet crowd, a sip that wakes your taste buds to the point of confusion.

Born as an interesting way to "break the barrier" from Brasserie de Silly, Stupid Silly Sour is a bold combination of the foundations of Silly Sour base and a more intense, complex dose of acidity. Alcohol concentration kept at 5.5% ABV, but the feeling it brings is completely different – strong, decisive and somewhat… uncompromising.

The difference comes from a special blending process between higher acidity batches, using Lactobacillus bacteria and Brettanomyces to create a richer aroma, with notes fermented apple cider vinegar, wet soil, hay and a little bit slight metallic taste. The aftertaste is long, sharp, and especially feels like a declaration for those who are "addicted to sourness".

Color of Stupid Silly Sour also darker, slightly reddish brown with a certain viscosity, evoking a feeling of calm on the outside but hidden explosion on the inside. Thin foam layer, fragrant funky complex, opening a journey of surprising taste discovery.

This is a beer that makes you sit back, breathe slowly, and… think. It’s not approachable, it’s not indulgent, but once you get over the initial “shock,” you’ll begin to discover the layers of flavor that are carefully packed, as if the brewer is whispering a secret through each drop of yeast.

Stupid Silly Sour is proof of that Brasserie de Silly They are not afraid to innovate. They don't just make beer to drink, they make beer to challenge, to raise questions, to create a dialogue between beer and the drinker.

If you ever wondered: “Can a glass of beer make you think like a poem?” - then Stupid Silly Sour is the answer.

A regular customer shared: “I remember very clearly the first evening I drank Silly Sour. It was a light rain in Saigon, and I was sitting alone in the corner of the shop. The first sip made me pause. Not only because of the thick sourness and complex aromas, but because it brought back things I thought I had forgotten long ago.”

A Belgian tourist once happened to stop by and enjoy it. Stupid Silly Sour also moved to exclaim: “This is an even more eccentric version than the original I had back home. In Vietnam, it carries both memories and something very strange – like the same song, but remixed in a different tone.”

It is moments like these that make Silly Sour not just a drink, but a part of memory. Although it is no longer distributed regularly, the taste and experience it leaves behind is still fresh in the minds of those who have once raised a glass at Beer & Barrel – where beer is not just for drinking, but for feeling, for remembering, and for telling.

6. Closing a Journey, Opening a Memory

Time passes, like the slightly sour aftertaste of Silly Sour lingering after each sip – elusive but unforgettable. That year, I met a person, drank a beer, lived a moment that seemed so small, but now has become a vast memory.

In a world where everything changes so fast, there are things that make us want to stop, like the quiet sour taste of Flanders Oud Bruin, like the cool autumn breeze of an afternoon in Hanoi, and like the distant gaze of a confidant who once sat over a glass of beer years ago.

Silly Sour It's not the kind of beer that makes you shout in the middle of a noisy bar. It's for quiet moments, for souls who have wandered, who have lost something, and then found it again in a sip of beer that seems so simple.
