1. Brewery History: The Journey From A Small Shop To A Scottish Beer Icon

Imagine a chilly afternoon at Glasgow, year 1988. In a small homebrew shop called Glenbrew, brothers Bruce and Scott Williams began their dream not with modern machines, but with a passionate love for ancient beer recipes. They didn’t just open a brewery, but started a journey of heritage and emotion – a journey called Heather Ale Ltd.

By chance, as fate would have it, a woman of Gaelic origin appeared, carrying with her a traditional recipe from over two millennia ago – Fraoch Heather Ale – a legendary herbal beer favored by the ancient Scots since about 2000 BC. In the dim light of the Glenbrew shop, the recipe is like a whisper from the past, calling back to an era when beer was not just a drink, but a ritual, a culture, a spirituality.

Soon, due to the growing love from the community and the growing demand, the 5-barrel mill in Taynuilt became too small. They moved to Craigmill from 1998 to 2004, where five ancient beers are born like epics re-brewed: Fraoch, Grozet, Alba, Ebulum and Kelpie. Each name is not just a taste, but a living memory of Scotland – land, sea, forest and tradition.

By year 2004, a golden milestone came when Williams Bros. officially took over Forth Brewery in Kelliebank, Alloa – and thus became the last custodians of an era of craft beer in the “beer capital” of Scotland. The name Williams Bros. Brewing Co. has since resonated like a symphony of nostalgia and modernity, in the heart of peaceful Alloa.

Today, from a small dream at Glenbrew, Williams Bros. has become one of the largest independent breweries in Scotland, with over 50 beer recipes spread all over the world. But the strange thing is: no matter how far they have gone, each drop of beer still retains a part of the soul of Glenbrew years ago - passionate, mysterious and charming like the land that gave birth to it.

2. Style & Characteristics of Ebulum Elderberry Black Ale

2.1. Old Scottish Gruit Style

Ebulum is a line Scottish Gruit – also known as Ancient Herbed Ale – carries the spirit of the ancient centuries when hops had not yet conquered the world. Instead of hops, the ancients chose elderberry, heather and herbs to impart aroma and flavor. It is a beer that does not follow modern standards but dances to the rhythm of the old forest, of the scent of the fields and the wind, where each fermenting drop is like a hymn to the motherland of Scotland.

2.2. Identification features

  • Color & Clarity: Ebulum Elderberry Black Ale is dressed in a dark, almost impenetrable black – like the Highlands sky at nightfall. A thin layer of brown foam floats on the rim of the glass like a thin, lingering smoke. Some descriptions say that the light can penetrate to reveal a dark brown hue, but overall it still has the rich, mysterious quality of a classic Stout.

  • Alcohol content (ABV): With 6.5% ABV, Ebulum is not as gentle as a spring breeze, nor as fierce as a storm - but is gentle and warm, enough to make our hearts flutter like soft music in a winter inn.
  • Bitterness (IBU): About 18 IBU – enough to create a highlight like a bass note in the symphony of malt and elderberry. Not harsh, not sharp, just gently caressing the tip of the tongue, leaving an unforgettable aftertaste.
  • Body & Structure: Ebulum is medium-bodied, leaning towards light. But don’t mistake that for thinness – it has a slight stickiness, like a black velvet coating on the tongue, seductive and inviting. The effervescence is moderate, just enough to support the aromas of roasted malt, cocoa and wild fruit that drift like mist through the memory.

3. Ingredients: Herbal Melody In Every Drop Of Beer

3.1. Main ingredients:

  • Roasted barley & chocolate malt: It is the soul that creates the enchanting black color and depth of flavor of Ebulum Elderberry Black Ale. Each sip leads you into a quiet space, where the scent of cocoa and coffee gently permeates like a breath in the morning dew.
  • Oats, barley and wheat (oats, barley, wheat): Three classic grains contribute to the soft, smooth structure of the beer body. When you close your eyes and enjoy it, you will feel the beer like a black silk gently sliding across the tip of your tongue.
  • Herbs / Herbs: Like a whisper from the deep Scottish forest – bog myrtle, heather and traditional herbs blend to create a fragrant harmony, both gently bitter and tinged with the ancient mystery of the classic Gruit style.
  • Water & Yeast:Although not emphasized in detail, the water at Alloa has a clean taste, a solid foundation supporting each note. Standard ale yeast is used as a silent conductor, patiently guiding the complete fermentation music.

3.2. Highlighting materials:

Elderberries not only contribute flavor but are also the soul that gives the name Elderberry Black Ale - Ebulum Elderberry Black Ale: Wild Herbal Flavor
Elderberries not only contribute flavor but are also the soul that makes the name Elderberry Black Ale.

Elderberries is the unique highlight, unmistakable. The aroma of ripe wild fruit, a bit of elegant sweet and sour taste, gentle tannins - all wrapped up in this small but charming fruit. Elderberries not only contribute flavor but also are the soul that makes the name "Elderberry Black Ale".

Some sources describe the fermentation as taking place after ripe elderberries are added, so that every drop of the beer is imbued with the essence of wild nature.

Although not using many hops, there is still a single hop – Single hop aroma added towards the end of the cooking process to contribute a whiff of aroma that compliments the traditional malt and herbal notes.

4. How to Enjoy: When Every Sip of Beer Is a Moment

4.1. Ideal Temperature & Suitable Cup Type

Ebulum Elderberry Black Ale should be served at approximately 10–12 °C – a temperature that embraces every note and blends every layer of flavor. At this temperature, you will feel the harmonious rise of deep roasted malt, wild elderberries and gentle herbs – cool enough to retain freshness, warm enough not to destroy the delicate structure of the beer body.

Please select tulip cup – not only because of its beauty but also because of the sophistication of its design: The slightly open mouth of the glass allows the aroma of fruit and roasted malt to gently rise like mist. The waist in the middle of the glass retains the fine foam, cherishing the olfactory experience at the tip of the lips and throat.
