Some flavors are born to comfort, to soothe familiar habits. And then there are flavors nurtured to challenge, to draw us into a new adventure right on the tip of our tongue. It doesn't arrive like a storm, but like a thin wisp of smoke from a distant campfire, fleeting through memory, evoking a vague nostalgia for the sweetness of crispy graham cracker, the richness of burnt marshmallows, and the subtle bitterness of melted chocolate.
That flavor, seemingly belonging only to campfire nights and stories, was suddenly seized by some magical hand, warmed, and fermented in the darkness. It became a living entity, taking the form of a dark, thick, and powerful liquid. This is no longer a memory, but a declaration through taste – gentle yet powerful, sweet yet complex, inviting us to step beyond the threshold of ordinary experiences into the world of... Dino S'mores.
1. Memories of Off Color Brewing and S'mores Brewery
Some stories begin with a gentle departure from the mainstream. Off Color Brewing It is precisely such a declaration, nurtured and conceived by two kindred spirits: John Laffler and Dave Bleitner. Leaving behind the legendary "Goose Island"—where they had previously worked on mysterious projects like Bourbon County Brand Stout—they carried with them a different aspiration. In 2013, in Chicago, Illinois, the brand was born, not to shout, but to whisper about forgotten beers. They chose an unusual mascot: The Tooth & Claw, a small, now extinct kangaroo. Perhaps this is a metaphor for cherishing seemingly lost values, allowing difference to become the most beautiful identity?

And then, from the studio of those dreamers, a sweet monster was born in 2014. It wasn't just a pint of beer, but a film of nostalgia compressed into every drop. Dino S'mores – The name is a playful, mischievous play on words, evoking the warm, rustic S'mores, but elevated to dinosaur proportions. Imagine: the flavors of crispy graham cracker, subtly bitter chocolate, and rich, sweet marshmallows, no longer confined to a campfire, but brewed in a rich, robust Pastry Stout barrel. It's a symphony for the palate, where childhood and the sophistication of craft beer meet in an explosion of flavor.
Initial, Dino S'mores It emerged as a secret treasure, reserved only for rare hunters. Packaged in luxurious keg bottles, it spoke for a nascent segment: the premium dessert beer market. In its early years, each launch was a limited-edition event, a seductive whisper to devotees of intense and sweet experiences. It was more than just a product; it was a bold pioneer, helping to define and transform Pastry Stout from an outcast into an intoxicating phenomenon.
Its journey has been a continuous adventure: from the first bomb-shaped bottles, to 2018 when Off Color expanded its territory with "The Mousetrap," and then the turning point in 2020 when it donned the convenient can packaging, bringing the dinosaur dream closer to the masses. Each stage is a new chapter in the story of relentless creativity and the desire to foster something different.
2. Dino S'mores' Distinctive Style

If there is one liquid that can embrace the entire darkness, it is Dino S'mores. It belongs to the family. Ale Proud – adventurous spirits infused with the warmth of rising yeast, then exuding a rich and complex aroma. But make no mistake, this is no ordinary drunkenness. It is Imperial Pastry Stout – a name that carries within it the promise of a complete culinary experience.
Two words Imperial as a subtle declaration of power. With its alcohol content. 10.5% ABV, It's a gentle giant, silently radiating warmth that spreads throughout the chest. And "Pastry Stout" is its sweet heart – a modern style where the producer becomes a pastry wizard. They don't just use malt, but also magically add sweet lactose, warm vanilla, and especially the essence of graham cracker crumbs, fragrant toasted marshmallows, chocolate chips… All combined, not to create a beer, but a captivating liquid dessert.
Raise the glass to your eyes, and you will see a pitch black, thick. The light seemed to be swallowed up, not a single ray able to penetrate. A layer of light, creamy brown foam gently covered it, like a layer of fine sugar on a cake, both proud and inviting.
Lips touch, and a world of sensations explodes. Its flavor profile is luxuriously full-bodied, thick and viscous, clinging to the tongue like a silky ribbon. You'll distinctly feel the sweet clinging to the mouth – what experts call "legs." The low IBU (only 15-30) makes the hop bitterness a subtle undertone, yielding the spotlight to the sweet and rich dance of roasted malt and pastry ingredients.

4. Ingredients That Make Up Dino S'mores
Behind the ethereal mist of Dino S'mores lies a world of carefully selected ingredients, like a symphony. Each component is not merely an ingredient, but a memory, an emotion magically transformed into a liquid.
4.1. The Heart of a Giant
It all started with seeds. malt Carefully nurtured and roasted with an almost spiritual understanding, the Pale malt provides a solid foundation, while a range of specially roasted malts enter the fray: Chocolate Malt offers a subtle bitter cocoa kiss, Black Malt or Roasted Barley caresses the palate with its captivating smoky notes, and Crystal Malt whispers sweet caramel melodies. And then, oats are present like a smooth silken layer, silently weaving an irresistible, rich, and smooth sensation to the palate.
Hops Here, it's not about creating a bitter rebellion. They are the talented pianists, gently plucking a few low notes from East Kent Goldings or Fuggles – woody, earthy notes – to keep the sweet melody from drifting too far. And the Ale, it's the silent and resilient diver, diving deep into the sea of sugar to create the warm 10.5% alcohol content, but skillfully keeping itself in the background, allowing other stars to shine.
4.2. When the S'mores Turn into Liquid
And then, the real magic begins. This is the moment the cake storm is summoned.
- Lactose (Milk sugar): The queen of sweetness. She never disappears after the fermentation process, remaining to bestow upon beer a soft, creamy sweetness, like freshly whipped cream, a warm, comforting sensation on the palate.
- Vanilla: This is a warm breath. Whether it's the delicate extract or real vanilla beans, it blends into the space, creating a sweet, cozy olfactory backdrop, like a room filled with candlelight.
- Chocolate/Cacao: The essence of allure. Fragments of cocoa or melted dark chocolate blend into the deep black liquid, creating a warm, rich, and luxurious feel.
- Graham Cracker: The essence of picnic memories. The fragrant, crispy taste of baked whole grain biscuits is recreated, perhaps from the actual biscuit flour, or from the ingenious blend of malts, to evoke the base of the perfect S'mores.

- Marshmallow: The final campfire glow. To recreate the sweet, puffy marshmallow candy baked over a fire, the producer might use sweet marshmallow extract, or cleverly incorporate a subtle smoky aroma from oak wood – like a breeze through the fire – to awaken a whole range of memories.
All together, they don't blend, they intertwine. They create a miniature world where the bakery, the oven, and the brewery all beat as one. Each sip of Dino S'mores is a journey through that forest of ingredients, to find the warm campfire in your mind.
